Monday Recipe - metabolic balance Award Winning* Chili
Ingredients:
2 cans red kidney beans; rinsed and drained (protein portion)
1 can diced canned tomatoes; rinsed and drained
1 onion
1 green pepper
½ yellow pepper
½ orange pepper
cumin
ground red pepper
pepper and salt
garlic
Instructions:
Rinse all vegetables, fresh and canned. Cut the peppers, onions and tomatoes and combine with the rest of the ingredients in a large pot. Add 2-3 cups of water. Add some pepper, sea salt, cumin, ground red pepper and garlic to taste.
Simmer on low –medium heat on the stove for 2-3 hrs. Chili will thicken as it simmers. Flavor improves when chilled and reheated the next day.
